Sarah Ullevig received her Bachelors of Science in Nutrition and completed her dietetic internship from Texas State University (TSU) at San Marcos.  As a registered and licensed dietitian in the state of Texas, she worked for four years as a clinical dietitian at St. Luke's Baptist Hospital, San Antonio and as a community dietitian at Meals on Wheels of San Antonio.  She then obtained her Ph.D. in Biochemistry at the University of Texas Health Science Center at San Antonio (UTHSCSA).  After a 6-month post-doctoral fellowship at UTHSCSA, she joined the Department of Kinesiology, Health, and Nutrition at the University of Texas at San Antonio as an Assistant Professor.  She currently teaches for the Coordinated Program in Nutrition and Dietetics at UTSA and conducts research in the Laboratory for the Study of Inflammation and Oxidative Stress in Metabolic Diseases.
